Job Description: -Lead and oversee all culinary operations for Fredrich, The Wyld, Caddy Snack and Banquet Operations. -Develop and execute regular menus, seasonal offerings, and special menus for groups and events. -Create innovative and memorable culinary experiences while staying current with restaurant and hospitality trends. -Coordinate, supervise, and actively participate in food preparation, cooking, plating, and service across all meal periods. -Ensure consistent quality, presentation, portion control, and adherence to Elk Ridge Resort standards. -Monitor food costs and ensure menu items achieve established food-cost targets. -Prepare, review, and manage budgets and forecasts, ensuring food costs, labour expenses, departmental expenses, and revenue targets are achieved. -Manage inventory, purchasing, product quality, and relations...
